The very first release: my 2025 Chardonnay from the limestone shores of Lincoln Lakeshore. Organically grown, hand-harvested, and rested in tight-grained French oak — 30% new, just enough to frame the wine without imposing on its character.
The result is a wine that does what its name promises, dancing on the palate, light on its feet, all with graceful charm and momentum.

Welcome
I'm Freddie, a somm turned Prince Edward County winemaker. I discovered my passion for wine serving at Ivy Asia in Manchester before relocating to Toronto—a move that led me to Prince Edward County, where I spent five vintages working my way up to Assistant Winemaker. Before long, I was crafting wine under my own label, Skimming Bird, and travelling to Central Otago, New Zealand, for vintage—all part of my journey to learn how to make the best glass of Pinot Noir possible.
Today, I'm your contact for all things wine in Southern Ontario: hosting dinners with private chefs, sourcing everything from everyday bottles to rare back-vintages, and this August, releasing my Chardonnay. Wherever you are on your wine journey, I'd love to help you along the way.
